
Damian’s Slaw that Slays

I must be honest upfront. I pinched this recipe from an advertising campaign we created for a premium Parmesan brand a few years ago. And I’ve been dining out on it ever since. So, now, I’m letting you steal it too. I like to think of it as a ‘paying it forward’ kind of thing. I hope you and your food-loving friends enjoy it. Oh, I must say, I did create the name of the dish, though. That's one thing I didn't nick.
Ingredients
Half a Savoy Cabbage
Half a Red Onion
1.5 tbsp White Wine Vinegar
1.5 tbsp fresh Lemon Juice
2 tbsp Virgin Olive Oil
2 tbsp Vegetable Oil
1. 5 cups grated Parmesan Cheese
Salt and Pepper to taste
Fresh or Dried Chilli (optional)
Method
First things first. Put on your favourite music playlist and grab a drink of your choice. An apron might be good as well.
Grab a big bowl. This is where all the ingredients will go into as you build this simple but delicious dish. I use one of those stainless-steel food prep bowls, but you’ll work it out.
Thinly slice cabbage and red onion.
Whisk together lemon juice, vegetable oil, olive oil, white wine vinegar.
Add to cabbage, red onion, and parmesan that should now be in your big bowl.
Salt and pepper the way you like it.
Mix it all together so it’s uniform. Pop it into a nice large serving bowl for the table.
You can also add fresh or dried chilli if you’d like a little more kick.
I like to serve this with chicken or veal schnitzel, along with chips or roast potatoes. But it goes with loads of other things. So, get inventive, it's your side dish now!
