JJ’s Mint Slice Balls

Get children elves to mash up the cookies in a large bowl until they look like a sandy beach you wished you were on, on holiday.

Ingredients

200g Arnott's Mint Slice cookies or substitute

125g Cream Cheese, softened

150g Milk Chocolate, melted

1 tbsp Coconut Oil (optional) or Vegetable Oil

20 Red M&Ms

10 Spearmint Leaf lollies 

Method

  1. Get children elves to mash up the cookies in a large bowl until they look like a sandy beach you wished you were on - on holiday.

  2. Mix in the cheese until combined. 

  3. Roll the mixture into balls about the size of heaped teaspoons. Place onto a baking paper-lined tray that fits in your fridge/freezer then leave them in there to firm up, ~30 minutes.

  4. While waiting, thinly slice the spearmint leaves (~5 per leaf). 

  5. Pick a bowl deep enough to dip your cheesecake balls in. Melt the chocolate and oil (optional) in a microwave-safe bowl in 30 second bursts for 2-3 minutes, stirring each time, until just melted.

  6. Carefully dip your balls into the chocolate mix with two small spoons and place back onto the tray. 

  7. Get tiny hands to decorate each ball with one red M&M and two spearmint leaf slithers onto the top of each of the balls.

  8. Chuck the tray back into the fridge to set for 3 hours, then store in an airtight container in the fridge for up to 5 days.
